Another Food-Related Post

Today I graded a paper. And I read a bit about statistics. Did not make any more progress on the dress that I'm sewing as a baby gift. (It's nearly done, and the shower is next week.) No idea where the time has gone. Oh, wait, I do. I've been sleeping as much as a cat lately.

Sweet Potato Slices

Cut a sweet potato into thin slices (about 3-4 mm thick) along the axis of your choice.

Shallow fry in olive oil, flipping over as needed, until soft and starting to brown on both sides.

Sprinkle with a touch of the fanciest salt in your kitchen and several grinds from a mixed peppercorn grinder.

Drizzle with the faintest hint of maple syrup.
